Malic acid, also known as hydroxysuccinic acid, has three forms: L-malic acid, D-malic acid, and DL-malic acid due to the presence of an asymmetric carbon atom. L-malic acid is a product of the tricarboxylic acid cycle in the human body, so the human body can only metabolize L-malic acid. The malic acid present in fruits such as apples, grapes, and lemons is all L-malic acid. If extracted from fruits, the content is low and the cost is high, making it impossible to produce on a large industrial scale. The malic acid produced by the catalytic synthesis of fumaric acid can only be DL-malic acid. Since the human body cannot metabolize DL-malic acid, although European and American countries allow DL-malic acid to be used as a food additive, people always have a sense of unease. All the malic acid produced by microbial methods is L-malic acid. Therefore, all the malic acid currently in use is produced by microorganisms. In the food industry and other fields, L-malic acid has basically replaced DL-malic acid. The consumption of malic acid is slightly higher than that of itaconic acid, and it is also a widely used organic acid. In the food industry, malic acid is used as an acidulant in beverages, jams, jellies, and wines; in the daily chemical industry, it is used in toothpaste and cosmetics to improve quality; in the pharmaceutical industry, it is compounded with amino acids to make injections, which are used as nutritional solutions after surgery and are also good for patients with abnormal liver function. In addition, it is also used as a component of coatings, detergents, and deodorants in the chemical industry.
