Food-grade Sodium Polyacrylate, a Thickening, Gluten-enhancing, Water-retaining and Stabilizing Food Additive
Sodium polyacrylate is a *** functional polymer material and an important chemical product. The solid product is white (or light yellow) block or powder, and the liquid product is colorless (or light yellow) viscous liquid. It can dissolve in cold water, warm water, glycerin, propylene glycol and other media. It is stable to temperature changes and has the function of fixing metal ions, which can prevent the negative effects of metal ions on the product. It is a surfactant with various special properties.
Food-grade sodium polyacrylate
1. Thickener. It has the following effects in food:
(1) Enhance the binding force of proteins in the raw flour.
(2) Make the starch particles combine with each other and disperse and penetrate into the network structure of proteins.
(3) Form a dough with a dense texture, with a smooth and shiny surface.
(4) Form a stable dough colloid to prevent the exudation of soluble starch.
(5) It has strong water retention ability, which can keep the water evenly in the dough and prevent it from drying.
(6) Improve the extensibility of the dough.
(7) Make the oil components in the raw materials stably disperse into the dough. [1]
2. As an electrolyte, it interacts with proteins, changes the protein structure, enhances the viscoelasticity of food and improves the texture.
3. Application examples:
(1) For bread, cakes, noodles, macaroni, it can improve the utilization rate of raw materials, and improve the taste and flavor. The dosage is 0.05%.
(2) For aquatic minced products, canned foods, dried laver, etc., it can strengthen the texture, keep the fresh taste and enhance the flavor.
(3) For sauces, tomato ketchup, mayonnaise, jam, light cream, soy sauce, it can be used as a thickener and stabilizer.
(4) For fruit juices, wines, etc., it can be used as a dispersant.
(5) For ice cream, caramel candies, it can improve the taste and stability.
(6) For frozen foods and aquatic processed products, it can be used as a surface gelling agent (for preservation).
4. Since it dissolves slowly in water, it can be pre-mixed with sugar, powdered starch syrup, emulsifier, etc. to increase the dissolution speed.
5. It can be used as a clarifying agent (polymer flocculant) for sugar solutions, salt water, beverages, etc.
Food safety:. Since the 1960s, sodium polyacrylate has been used abroad for thickening, strengthening and preserving various foods. It is a food additive approved by the US FDA, the Ministry of Health, Labour and Welfare of Japan, etc. In 2000, the Ministry of Health of China also officially approved it as a food-grade thickener.

Water treatment agent - dispersant

Sodium polyacrylate is a mature industrial product with an industry standard. The standard number is: HG/T2838 - 2010. The standard stipulates that the product appearance is a colorless to yellow liquid, and the solid content is greater than or equal to 30%.
Those with high relative molecular mass are used as flocculants.
Water treatment agent - flocculant
Sodium polyacrylate is a linear, soluble polymer compound. Due to the electrostatic repulsion of the carboxyl groups on its molecular chain, the coiled polymer chain stretches, causing the functional groups with adsorption properties to be exposed on the surface. Since these active sites adsorb on the suspended particles in the solution, forming bridges between particles, thereby accelerating the sedimentation of suspended particles. As a flocculant, the relative molecular mass of sodium polyacrylate can reach millions. Its commercial form is a yellow viscous liquid, and the solid content may reach about 8%. The corresponding intrinsic viscosity η ≥ 3.40.
Sodium polyacrylate flocculant is a polymer material especially suitable for the brine purification in the caustic soda and soda ash industries, the red mud sedimentation and separation in alumina production, the protein recovery from the wastewater of monosodium glutamate factories, and the sugar - making industry.
Paper - making chemicals
As a dispersant in paper - making coatings. The most suitable relative molecular mass is 2000 - 3000. The commercial form is generally a liquid with a solid content of 30% or 42%. The viscosity is less than 600 mPa.s. The appearance is a colorless transparent to amber liquid. The pH is between 6 - 9.
