1. [Introduction to Xanthan Gum]
Chinese Name: Xanthan Gum
English Name: Xanthan gum
English Aliases: Corn sugar gum; Xanthan; Gum xanthan; UNII-TTV12P4NEE
CAS Number: 11138-66-2
EINECS Number: 234-394-2
Xanthan gum, also known as yellow gum, Hansen gum, and xanthan polysaccharide, is a monospore polysaccharide produced by the fermentation of Pseudomonas. It is an acidic extracellular heteropolysaccharide composed of straight chains synthesized by the 1,4-bond after cutting the 1,6-glycosidic bond and opening the branched chains through aerobic fermentation bioengineering technology using carbohydrates as the main raw material by Xanthomonas campestris pv. campestris. In 1952, Xanthomonas campestris pv. campestris was isolated by the Northern Regional Research Laboratory of the United States Department of Agriculture in Peoria, Illinois, and the cabbage extract was converted into a water-soluble acidic extracellular heteropolysaccharide.
2. [Usage Method of Xanthan Gum]
Xanthan gum is completely soluble in most water-based systems. However, due to its extremely strong hydrophilicity, if it is directly added to water without sufficient stirring, the outer layer will absorb water and swell into a gum mass, which will prevent water from entering the inner layer and affect its function. Therefore, the correct usage must be noted: Take one part of xanthan gum and mix it evenly with ten or more parts of other dry raw materials, such as sugar, monosodium glutamate, salt, etc. in food production. Then slowly pour it into the stirring water, soak it for about two hours, and continue to stir until it is completely dissolved.
3. [Packaging and Transportation of Xanthan Gum]
1. Bagged: Each bag has a net weight of 25 kilograms, with an inner plastic and outer woven paper composite bag.
2. Special packaging such as 25-kilogram cardboard drums, bags, cartons, etc. can be provided according to user requirements.
It should be protected from moisture, sunlight, and rain, and should not be stacked outdoors. It should not be mixed or transported with toxic, odorous, colored powders, or corrosive substances. Avoid contact with skin and eyes. If it accidentally gets into the mouth or eyes, please rinse with water.
