Properties: Erythritol is a white crystalline substance, slightly sweet, with a relative sweetness of 0.65, a cooling sensation, and low calorie content, about one-tenth of the calorie content of sucrose. Erythritol is soluble in water (37%, 25°C). Due to its relatively low solubility, it is easy to crystallize.

③, Uses of Erythritol:

Erythritol is a low-calorie sweetener and a diluent for high-intensity sweeteners. It can be used in chocolates, baked goods, candies, table sugar, soft drinks, etc. The maximum usage amount is 3%.

The sweetness of sweeteners is affected by various factors, among which the main ones are concentration, temperature, and medium.

Generally speaking, the higher the concentration of the sweetener, the greater the sweetness. However, the degree to which the sweetness of most sweeteners increases with concentration varies.

The sweetness of most sweeteners is affected by temperature, usually decreasing as the temperature rises. For example, the sweetness of a 5% fructose solution is 147 at 5°C, 128.5 at 18°C, 100 at 40°C, and 79.5 at 60°C.
