Usage method
1. This product mainly works through sulfur dioxide. For details, refer to sulfur dioxide.
2. FAO/WHO (1983) stipulates that for quick-frozen small shrimps, prawns, and lobsters, the *usage amount in semi-finished products is 100mg/kg, and in cooked products is 30mg/kg (calculated as SO2, used alone or in combination with other sulfites); for quick-frozen French-fried potato chips, it is 50mg/kg (calculated as SO2, used alone or in combination with other sulfites).
White or colorless crystals, or white crystalline powder or granules. Usually has the smell of sulfur dioxide, with a relative density (d145) of 2.300. Decomposes at 150°C and gradually oxidizes to sulfate in the air. Can produce sulfur dioxide gas in acid. Soluble in water, hardly soluble in ethanol, and insoluble in ether. The pH of a 1% aqueous solution is 3.4 - 4.5. Has strong reducibility. Can be used in beer, with a *usage amount of 0.01g/kg; used in preserved fruits, biscuits, glucose, sugar, rock sugar, maltose, candies, liquid glucose, bamboo shoots, mushrooms, and mushroom cans, with a *usage amount of 0.45g/kg. The residual amount is calculated as sulfur dioxide. For bamboo shoots, mushrooms, and mushroom cans, it shall not exceed 0.05g/kg; for biscuits, sugar, and other varieties, it shall not exceed 0.1g/kg; for liquid glucose, it shall not exceed 0.2g/kg; the residual amount of preserved fruits ≤0.05g/kg; for fresh grapes (tablet gasification method calculated as sulfite), the *usage amount is 2.4g/kg, and the residual amount (calculated as SO2) is 0.05g/kg.
