Definition of enzyme activity unit: The amount of enzyme that releases 1 millimole of maltose from 2% soluble starch solution per hour at 60 ℃ and pH 5.6 is defined as 1 enzyme activity unit (U)

Character: Grey to light gray powder. Extracted from Bacillus subtilis, soluble in water and dilute buffer, almost insoluble in ethanol. Enzyme reaction: starch (soluble)+nH2O=n maltose+dextrin. The optimal pH is between 4.0 and 6.0. The optimal temperature is 50-60 ℃. Isoelectric point (pI) 4.77. The absorption coefficient (E1% 280) is 12.3. Inhibitors include cyclohexyl amylose and methyl- α- Glucoside, thiol reagents (4-chloromercuric benzoic acid, iodoacetamide), heavy metal ions (Cu2+, HG2)

Purpose: Biochemical research. Can decompose amylose into maltose. The production of oligomeric isomaltose (IMO50, IMO90 types) using transglutaminase is superior to fungal enzymes. Combined with pullulanase to produce ultra-high maltose
