Due to its low-fat, high-protein characteristics, cold-brewed yogurt is well-suited as part of a healthy diet, particularly appealing to consumers who prioritize wellness. Additionally, cold-brewed yogurt has a rich texture, and the cold-brewing press can be used to combine it with various ingredients, enhancing appetite and satisfaction. The standard production process for cold-brewed yogurt fermentation equipment: raw milk → storage → filtration → preheating → homogenization → sterilization → precooling → cooling → fermentation → filling → CIP cleaning.
The simplified production process for pasteurized milk: raw milk → storage → pasteurization → cooling → fermentation → filling.
Storage: Temporary storage of milk.
Filtration: Removes hair, clumps, and other impurities from the milk.
Preheating: Gradually warm the milk to a temperature range of 45°C to 65°C. This temperature range is ideal for the operation of homogenizers.
Homogenization: Through high-pressure homogenization, the protein balls and fat balls in milk are further broken down, preventing the fat balls from rising to the surface and enhancing the product’s quality and taste.
Sterilization: Dairy products are sterilized using pasteurization or high-temperature, short-time sterilization methods, which kill most of the harmful bacteria such as E. coli, spore-forming bacteria, and staphylococci present in the raw milk, while preserving beneficial bacteria like probiotics. This improves the safety level of the food and extends its shelf life.
Cooling: Lower the temperature of pasteurized milk to an appropriate level for yogurt fermentation, which is typically between 45°C and 47°C.
Ingredients: A specific ratio of sugar and microorganisms must be used to ferment the yogurt into the desired flavor.
Fermentation: Pour the prepared milk into a yogurt maker (for solid yogurt) or continue to stir and ferment it in a fermentation tank (for liquid yogurt). The typical temperature range is 45°C to 47°C, and the fermentation time is 6 to 8 hours.
Refrigeration: Processed milk is stored in a refrigerated tank at a temperature of 2-6°C, with a better preservation temperature of 4°C.
Cold-brewed yogurt pressurization and filling: Filling is performed using manual or automatic filling machines. For smaller production volumes, a semi-automatic dual-head filling machine is sufficient. For larger production volumes, a fully automatic multi-head filling machine can be used.
Secondary sterilization: This involves sterilizing the surface of filled baby bottles.
Cleaning bottles: If the glass bottles need to be recycled, they must be cleaned and disinfected before being reused. They can then be dried using hot steam.
