A juice concentrate evaporator is a core piece of equipment in modern juice processing. Its main function is to remove some of the water from the juice through evaporation technology, achieving high-efficiency concentration to reduce transportation and storage costs, extend shelf life, and retain the juice's nutrients and flavor. Its technical principle is primarily based on the synergistic effect of heat and mass transfer. Under specific temperature and pressure conditions, the water in the juice is vaporized and separated, thereby increasing the concentration of soluble solids in the juice.


I. Basic Working Principle After the juice enters the evaporator, it is heated to a boiling state by steam or electric heating elements in the heating chamber, and the water is rapidly converted into water vapor. The generated steam and concentrate undergo gas-liquid separation in the separator: the water vapor exits from the top, is cooled by the condenser, and becomes condensate; while the concentrated juice exits from the bottom or is recycled back to the heating chamber for further evaporation. This process is carried out in a vacuum environment, which lowers the boiling point of the juice and avoids the destruction of heat-sensitive nutrients (such as vitamin C and aromatic substances) by high temperatures, making it particularly suitable for easily oxidized juices such as orange juice and apple juice.

II. Key Evaporation Methods Commonly used evaporation methods in industry include:

Boiling Evaporation: This method involves heating the fruit juice to a vigorous boiling point, causing rapid vaporization of water. It is the mainstream industrial method.


Multi-Effect Evaporation: This method utilizes the secondary steam generated in the previous effect as a heat source for the next effect, achieving multiple uses of heat energy and significantly reducing energy consumption. For example, a triple-effect evaporator can save over 60% in energy.


Falling Film Evaporation: Under the influence of gravity, the fruit juice forms a thin film along the inner wall of the heating tube. This method has high heat transfer efficiency and a short heating time (only a few seconds), effectively preserving flavor and nutrients. It is suitable for heat-sensitive fruit juices.

MVR (Mechanical Vapor Recompression): This method uses secondary steam, pressurized and heated by a compressor, to be reused as a heat source. Energy consumption is only 20%-30% of traditional methods, resulting in significant energy savings.

III. Core Structure and Synergistic Mechanism The equipment mainly consists of a heating chamber, an evaporation chamber (separator), a circulation system, a condenser, and an automatic control system. The heating chamber is responsible for heat transfer; the evaporation chamber achieves gas-liquid separation; the circulating pump ensures uniform heating of the juice; the condenser recovers heat from the steam; and the control system uses sensors to adjust temperature, pressure, and liquid level in real time to ensure stable operation and prevent scorching or dry burning.
