Activity definition: 1 gram of enzyme powder or 1 ml of enzyme solution catalyzes the hydrolysis of pectin to produce 1 ug of galacturonic acid per hour at 50 ℃ and pH 3.5, with an enzyme activity unit of 1 enzyme
The temperature range of enzyme action: 30-60 ℃, optimal 45-55 ℃, above 65 ℃, the enzyme will quickly become inactive.
Action pH value: 3.0-6.0, optimal pH is 3.5-4.5.
Moisture content: ＜ 8.0%
