Definition of vitality: 1 U responses to the amount of vitality which librates 1 μ Mol maltose per minute at pH 6.0 and 25 ℃ (start acc. to Zulkowsky, Fluka No. 85642, as substrate)


Character: Liquid. Extracted by Aspergillus oryzae. Under higher temperature conditions, this enzyme can rapidly hydrolyze the refining of starch molecules α- 1,4 glucoside bonds arbitrarily cut off starch molecules from the inside to form short bond dextrins with varying lengths and a small amount of oligosaccharides, resulting in a rapid decrease in the viscosity of starch slurry. Prolonged liquefaction time can also produce small amounts of glucose and maltose


Purpose: Biochemical research. Widely used in industries such as glucose, maltose, dextrin, fructose, oligosaccharides, alcohol, beer, monosodium glutamate, food brewing, organic acids, textiles, printing and dyeing, papermaking, and other fermentation industries.
