Acid regulator: TSPP can be used as an acid regulator in food.
Sequestrant: It acts as a sequestrant, which can remove naturally occurring calcium ions from proteins.
Protein modifier: TSPP is used as a protein modifier, which results in accelerating protein gelation, improving texture (mouthfeel) and reducing cooking loss in meat analog production.
Coagulant: It can be used as a coagulant in food.
Dispersing agent: TSPP acts as a dispersing agent in food.
Specifically, it is used in the following foods:
Meat analogs, such as soy or wheat-based food,Marshmallows,Pudding,Cheese,Ice cream,
Milk protein products,Tuna.
In addition to food, TSPP is also used in toothpaste to prevent the formation of calculus by reducing the deposition of calcium and magnesium on teeth. It is generally recognized as safe (GRAS) when used in accordance with good manufacturing practice.
