Glutathione is a substance made from the amino acids glycine, cysteine, and glutamic acid. It is an antioxidant that prevents damage to vital cellular components by reactive oxygen species such as free radicals and peroxides.
Glutathion for Food Application:
1. added to yoghurt or baby food as the equivalent of vitamin C, which acts as a stabilizer.
2. added to minced fish to prevent the colour from deepening.
3. added to pasta to enable manufacturers to reduce the time spent on bread to half or a third of its original size and to act as a nutritional and other enhancement to the food.

Glutathion for Cosmetic Application:
Glutathione can prevent the penetration of the enzyme Los tyrosinase, which results in the inhibition of melanin formation.
