The principle of ultrasonic cutting knives is completely different from the traditional pressure cutting.

When the pressure exceeds the shear strength of the material being cut, the molecular bonding of the material is pulled apart to effect the cutting. Since the material is rigidly pulled apart by strong pressure, the cutting edge of the cutting tool must be very sharp, and the material itself must withstand relatively large pressures. Therefore, the soft, elastic material has a poor cutting effect and is more difficult for the viscous material.
