Fresh-keeping Technology of leguminous vegetables in Cold Storage
Bean vegetables mainly include kidney beans, cowpeas (beans), sweet peas and Dutch beans. Legumes are rich in nutrients, rich in protein, carbohydrates, vitamins and mineral elements, high economic value. Legumes are stored and transported under high temperature, the respiratory rate is very high, the seeds in the pods grow rapidly, the degree of pods fibrosis is increasing and aging, the quality of legumes is reduced, and the serious ones lose their edible value, so beans are very difficult to keep fresh. Low-temperature storage is usually only suitable for 2-3 weeks, while those without cold storage can only be stored for less than 1 week.
All the legumes should be harvested before the seeds were fully developed. When the seeds in the pods were fully developed, the pods were fibrotic and tenacious and could not be used for storage. Pod damage should be minimized during harvesting and shipping, especially at the tip of the pod. Do not damage inflorescences and young pods when you harvest cowpea.
Second, the pods harvested by pre-cooling and packing should be removed from the field heat as soon as possible, and the respiration should be reduced as soon as possible. After harvest, the pods should be put into the pre-cooling or cold storage immediately, so as to reduce the bean temperature to about 10 ℃, and select, classify and load baskets (bags) in the pre-cooling storage. Kidney beans, beans can be packed in plastic baskets or corrugated paper boxes, each basket (box) to the capacity of 3 to 4, the top of the basket covered with a layer of Kraft paper, and then moved into the storage freezer palletizing, covered with plastic film account; Sweet peas, Dutch beans in foam cream packaging or polyethylene film bags in small packaging for spontaneous atmosphere storage.
Thirdly, the storage temperature of leguminous vegetables is 7 ~ 10 ℃, the relative humidity is 85% ~ 90%, and the storage requirement of bean is not easy to wilt under high humidity (90% ~ 95%), but it can not be too high, otherwise it will cause serious rot. It is necessary to avoid excessive temperature fluctuation in storage and transportation, cowpea and kidney bean are prone to cold injury when stored and transported below 6 ℃, and pods above 14 ℃ are rapidly fibrotic. When transporting legumes, it is best to keep the temperature at about 10 ℃ by using refrigerated trucks or putting crushed ice on the top of the truck and around the box to keep the temperature at about 10 ℃ as far as possible. During controlled atmosphere storage, the concentration of carbon dioxide is 1% ~ 2%, the concentration of oxygen is 6% ~ 10%.
