Angel cellulase is mainly used to degrade cellulose in fibers to create simple sugars. It is capable of breaking down cellulase and fibers into simple sugar units, resulting in greater utilization of raw ingredients.

*Activity : One activity unit of cellulase is the amount of enzyme, which liberates 1 μmol of reducing sugar from the substrate in one minute at 50°C and pH4.8.
