PICKLED CUCUMBERS
English name: gherkin, pickled cucumber.
Scientific name: Cucumis Sativus.
CN/HS number: 200110000.
Pickled cucumber has a very long history from ancient times to the present. Today, this pickled fruit is very popular all over the world. Our pickled cucumbers are manufactured under a traditional method of preserving food by using salt, sugar, spices and acetic acid. It is done through a brine fermentation process. Fresh cucumbers are picked, washed and salted thoroughly, and then added to a brine solution for a number of weeks. Vinegar, sugar and spices can be added to the process depending on the customer’s requirements.
Harvest seasons:
There are two main cucumber harvests in Vietnam.
Spring harvest: from March to May every year.
Winter harvest: from November to January of the next year.
Output per harvest: 8,000-10,000 tons.
Processing method: preserved in acetic acid or vinegar.
Specifications:
Fresh cucumbers size 3-6, 6-9cm: 50-55%.
Brix: 6-8%.
Salt: 1.8%-2.5%.
Acetic acid: 0.3%-0.45%.
Spices (garlic, chilli, carrot, celery, dill...): 2-3%.
Pure water.
Samples and recipes: available upon request.
Lid colors available: green, red, purple, white, yellow, logo...
Jar shapes available: round, square.
Jar sizes available: 720ml, 1500ml, 540ml, 480ml, 370ml...
