Production Methods
The sake is made only from carefully selected and domestically sourced rice and water.

The rice that is used is a variety that has been developed specifically for sake.

The soft water (Gassin spring water) that is used produces a sake that is also soft and gentle.

It is through the processes of rice milling ⇒ cleaning ⇒ fermentation ⇒ filtration ⇒

heat sterilization that rice and water become sake.

UYO-OTOKOYAMA (Yamagata City)	Established 1789. Their policy is "Loved by local people". They are doing their best in selection in materials, technical study, fullness of equipment, etc., and think that the heart of brewer is the most important in sake brewing. -Awards- Annual Japan Sake Awards Gold medal 2004-2012, 2015
KURO-ZAEMON (Yonezawa City)	Established 1870. Their brewery located heavy snowfall area. They are brewing "jizake", local sakes, with their unconventional idea in this beautiful natural environment. TOHOKU-IZUMI (Yuza-machi)	Established in 1902. It names in a meaning called the alcohol brewed the water of "TOHOKU" pellucid "IZUMI(spring)". It is located in a border between prefectures with Akita Pref., and the Chokai Mt. subsoil water is used for preparation water. It is the brewery with a smooth taste popular also with a woman. -Awards- Annual Japan Sake Awards Gold medal 2001-2010
TATENOKAWA (Sakata City)	Established in 1832. They brews sake with rice made in Sakata located Tatenokawa. In 2010, they changed all the alcohol to junmai-dai-ginjo because the aim at brewing the high-grade sake with which even only one cup of grass can be satisfied. AZUMANO-HUMOTO (Nanyo City)	Established in 1897. The brewery is located in Akayu Onsen(hot spring), Nanyo city satisfies many tourists, and has fans all over Japan. Their sake are dry taste which for people like sake, and drink every day! TAKENOTSUYU (Tsuruoka City)	Established in 1858.TAKENOTSUYU located in the foot in Haguro Mt. Published also at Michelin Guide. Use local rice in Haguro. Using "Gassan-hukuryusui" for preparation water, the character is alkali super-soft water. Their sake is very smoothly and matches broadly the Japanese meal which was rich in variety. -Awards- International Wine Challenge 2015 silver The Fine Sake Awards 2015 Gold medal
