gradually popular with persons based on its advantages of
convenience healthy security and fast. And modify tapioca
starch becomes the important additive of frozen dumplings
because of its safety and natural character.
Modify starch for noodles performance in frozen dumplings:
1.Make dumplings flour whiter. modify starch whiteness is over 90%,so modify starch in stead of brightener ,which is forbided using in food, used in dumplings powder.
2.Improve the flour ash,make it lower.
3.Dumplings flour with modify starch will have a lower gelatinzation temperature and higher thermal visosity. when frozen in lower temperature,dumplings skins start gelatinizate and absorb amounts of water.When boiled dumplings skin can reduce starch loss.Good film-forming properties can provide a bite and smooth taste.

Modify starch is modified from nature starch.There are three ways to change starch property.One is changing physical property,including heat couring and drying and grinding.The 2nd one is changing biology property based on enzyme preparation.The last one is changing chemical property by chemical bond between molecules is broken and molecule structure changed.So the modify starch can perform better than nature starch to meet factory need.
