Most central kitchens run on two numbers: meals per day, and staff per shift. The first one gets all the attention. The second one decides how many lockers you need — and it's the number buyers most often get wrong.

Under-provision a central kitchen changing room and the problem shows up fast. Coats on benches. Bags on the floor. Wet aprons draped over doors. In a facility built around hygiene control, that's not a storage complaint. It's a finding waiting to happen at the next audit.

Why Central Kitchens Are a Harder Problem

Read those rows together and you see the real issue. It isn't that a central kitchen is the harshest environment on the list — it isn't. It's that hundreds of people move through a small room in a short window, several times a day, in a wet and greasy space.

That combination breaks lockers in two ways. They get overloaded, and they get knocked around.

How Many Lockers Do You Actually Need

This is where most projects go wrong, and it's fixable before you spend anything.

Work from peak shift, not headcount.

  1. Count your biggest shift. Not total employees, not average attendance. The largest group that changes at the same time.

  2. Add the handover overlap. If the outgoing and incoming shifts cross for 20 minutes, those two groups need locker space at once.

  3. Decide compartments per person. One compartment if staff only store workwear. Two if they arrive in street clothes and change on site. Add a third for footwear if the room handles boots.

  4. Add a working margin. Around 10% covers visitors, contractors, and new hires before they're issued a locker.

Here's how that looks in practice. Say your busiest shift is 180 people, with a handover overlap of 20. Staff store street clothes and workwear separately. That's 200 people needing two compartments each — 400 compartments, not 180.

The most common mistake is dividing total staff by two and ordering that many single lockers. It looks fine on paper and fails on the first Monday morning.

Making the Room Work When Space Is Tight

A central kitchen changing room rarely grows. You have to fit more storage into the same footprint. Five approaches actually work.

  • Go up, not out. Full-height banks use wall space that single-tier units waste.

  • Use the corners. Corner units recover floor area that standard banks can't reach.

  • Split the function. Lockable compartments for valuables, open hooks and rails for bulky coats and aprons. Not everything needs a door.

  • Keep the aisle clear. Aisles below about a metre turn every changeover into a shuffle, and shoulder-height contact damages doors over time.

  • Plan a dry corner. If wet gear goes straight into a closed locker, the room smells by Thursday.

None of these need a bigger room. They need a layout drawn before the order goes in.

What Rinse-Down Means for the Spec

Every-shift washing changes what the locker has to be. This is the short version of the requirements.

Grease deserves a note of its own. Cooking oil and airborne fat settle on every surface in a central kitchen, and they don't rinse off the way water does. On a painted locker, grease works into the coating and turns sticky and yellow over time. You can't wash it out — the surface holds it. On a smooth stainless panel, it wipes away with the rest of the washdown.

The Hidden Cost of Too Few Lockers

Under-ordering lockers doesn't save money. It moves the cost somewhere less visible.

  • Gear ends up on benches and floors, which shows up in hygiene inspections.

  • Staff push wet workwear into whatever space is free, which spreads moisture and smell.

  • Changeovers take longer, and in a kitchen running on tight meal windows, that time comes off production.

  • Overloaded and slammed doors fail early, so replacement comes sooner.

Filling the room properly costs less than the problems an under-filled room creates.
