Characteristics: The melting point is of 150 to 154ºC (decomposition).It is freely soluble in water(60g/ml), saringly soluble in ethyl alcohol(1g/100ml),almost insoluble in ether. It can be hydrolyzed into the balanced solution of GDL and gluconic acid in aqueous solution.The Ph value of new formulated 1% solution is 3.5, after 2 hours,it will turn to 2.5.
Application: This product is a multifunctional excellent food additive, and mainly used as protein coagulant, sour agent, swelling agent, preservative, flavoring agent, chelating agent, color retention agent etc. It is widely used in food, commodity chemical, pharmaceutical, cosmetics, plastics and resin modifying, electroplating, polishing, metal cleaning, organic synthesis and other aspects.
