Polydextrose is a D-glucose polymer made from glucose, sorbitol and citric acid by vacuum polycondensation after mixing and heating into a molten mixture in a specific proportion. Polydextrose is an irregular polycondensation of D-glucose, which is mainly combined with 1,6-glycoside bond. The average molecular weight is about 3200 and the limit molecular weight is less than 22000. Average degree of polymerization 20.
Polydextrose is a new type of water-soluble dietary fiber. So far, it has been approved by more than 50 countries to be used as a healthy food ingredient.
