Tragacanth Gum Powder
Gum tragacanth is a gum produced from a bush of the genus astragalus. It swells in water to give a highly viscous sol or paste.
Solutions have a ph of 5-6. It is stable at low ph and is an effective suspending agent because of its stability and acid resistance.
It has been used as a stabilizer, emulsifier, and thickener in food products. Its superior water-absorbing qualities make it an excellent thickening agent.
Gum tragacanth is used in many everyday commercial products of low viscosity as jellies and pourable dressings.
Can be used in many food and drinks, like salad dressings, sauces, fruit fillings, and citrus beverages.
