INTRODUCTION
Extracts of the leaves of the Stevia rebaudiana Bertoni plant are used to sweeten food and beverages in South America, Japan and China with no know side effects. Stevia is has become a major source of high-potency sweetener for the growing natural food market. USES
Stevia is used in the manufacturing of many food additives , beverages, medicine and health supplements ,various condiments , complex sweetener , pickles and other preservatives .
1) Beverages: carbonated and still soft drinks, fruit-juices and fruit syrups
2) Table-top: compressed sweeteners, powdered sweeteners(spoon-for-spoon), sweeteners sachets and liquid table-top sweeteners.
3) Dry mixes: hot and cold chocolate and beverage mixes and instant desserts
4) Dairy: yoghurt, frozen novelties and desserts.
5) Confectionery: chewing gum, boiled sweets, pastilles, mints, chocolate, gum and jellies.
6) Pharmaceutical: tablets, sugar-free syrups, powdered mixes and effervescent tablets.
