Turmeric is the boiled, dried, cleaned and polished rhizomes of Curcuma longa. The plant is a herbaceous perennial, 60-90 cm high. It is a native of India and has always been known to be the Indian saffron. Apart from India, it is cultivated in Pakistan, Malaysia, Myanmar, Vietnam, Thailand, Philippines, Japan, Korea, China and Central America. In India, it is cultivated in the States of Andhra Pradesh, Maharashtra, Orissa, Tamil Nadu, Karnataka and Kerala. Although turmeric is powdered and used in India, the East Asians prefer fresh rhizomes.
It is perhaps one of the very few ingredients that form a prominent ingredient in almost all lentils, pulses, vegetables and curries of Indian cuisine. It is believed to aid digestion and also works as an effective disease preventing mechanism inside the body.

Kasturi
The core of this rhizome variety is pale yellow or white in color. It has a heady fragrance after curing and is often used as a part of beauty treatments.
Mundaga
These rhizomes are thick and have many fingers.
Balaga
These have fewer number of fingers with thinner corns.
Yalachaga
These rhizomes are characteristically small, but have a large number of fingers;

Usage of Turmeric

1. Cuisine:

2. Medicine:
According to the system of traditional Indian healing, turmeric is used as an antiseptic, forming a part of many ointments & lotions for external wounds and skin infections. Turmeric is also used in the treatment of arthritis and to treat jaundice in the initial stages. The Ayurvedic and Unani forms of medicine use turmeric as a vital ingredient of their medicines to heal a variety of disorders: from blood purification to digestive ailments to liver problems. Long known for its anti-inflammatory properties, recent research has revealed that turmeric is a natural wonder, proving beneficial in the treatment of many different health conditions from cancer to Alzheimer's disease.
3. Dyeing agent:
Silk and woollens from India are dyed with turmeric by immersing the fabric in an acidic bath. It is also used in the food, pharma, confectionary and rice milling industries.
4. Cosmetics:
It is widely used as part of cosmetic preparations from the traditional kumkum to anti- acne and pimple creams. It is also used by the women of India to remove facial hair.
