α- acetolactate decarboxylase (ALDC) is a mountain submerged microbial fermentation and after extraction and purification of beer special enzyme . ALDC for beer fermentation, by the catalytic decarboxylation of α- acetolactate decarboxylase to 3 - hydroxy - 2 - butanone to prevent the formation of diacetyl . Therefore, the beer fermentation can greatly shorten the maturity or even omitted.
Action principle :
1, the use of this product can reduce or eliminate diacetyl reduction time , shorten the fermentation cycle, increase beer production .
2, the use of this product can guarantee that diacetyl is not excessive , to ensure the stability of the quality of beer .
