Bamboo is actually a grass that grows to a harvest height between 3-5 years. Some species grow up to 2 feet per day. After harvesting, bamboo does not require replanting. Bamboo has an extensive root system that continually sends up new shoots, naturally replenishing itself, making it one of the most renewable resources known. Bamboo is 16% harder than Maple Wood, 1/3 lighter in weight than oak, yet in some instances as strong as steel. Bamboo holds the promise of a sustainable, cost effective, and ecologically responsible alternative to the widespread clear cutting of our old growth forests

Bamboo cutting boards come in a huge variety of shapes, sizes and grain styles. Once you've chosen yours, you should treat it with a coating of food-grade mineral oil before using it for the first time.

In the vast array of earth-friendly products, bamboo is a star. It is dense, beautiful and very water-resistant, which means it won't shrink or swell as much as traditional wood cutting boards.
If you prefer it to have a scent, you can add a few drops of sage, lemon or rosemary essential oil to four or five oz. of mineral oil .

Gently wash your new board by hand with mild dish detergent. Let it dry completely, on its side, to remove as much moisture as possible. Next, coat the board all over with the mineral oil, letting it soak in for a few hours or preferably overnight. Then rinse the board well and wipe with a dry paper towel. Repeat this process if you want the finish to be a bit darker
