Crispy Mediterranean Pizza
Crust:
2-1/4 tsp yeast
1/4 tsp sugar
3/4 cup hot water
1-3/4 cups flour
1/2 tsp salt
-corn meal
Toppings:
1/2 cup pizza sauce
1 medium tomato,thinly sliced
1/2 cup sliced roasted red peppers
1/3 cup sliced kalamata olives
1 tbsp minced garlic
1/3 cup crumbled feta cheese
1/3 cup shredded mozzarella
Method:
1.In a small bowl,dissolve yeast and sugar in hot water;let stand for 5 minutes.
2.In a medium bowl,stir together flour and salt.
Pour yeast mixture over flour mixture and mix well with a spoon until dough begins to pull away from sides of the bowl.
3.Preheat pizza stone in oven at 450°F for 15 minutes.Turn dough onto floured surface and knead for 2 minutes,until smooth and elastic.
4.Sprinkle surface with corn meal and roll dough into a 12-inch circle.
5.Spread sauce evenly over crust,leaving 1/2 in.edge.
6.Sprinkle with remaining toppings.
7.Carefully slide pizza onto hot stone.
8.Bake 10-14 minutes,until crisp and edges are golden.
