Spring egg whisk perfect for a wide variety of every day whisking and blending tasks. Sometimes called a spring whisk, spiral whisk or coil whisk this whisk's bouncy, up-and-down action makes it astonishingly efficient at whipping volume into egg whites and cream. This type of whisk is especially useful for keeping sauces from sticking to a saucepan: it doesn't take much pressure to push the whisk flat against the bottom of a pan or bowl. Gently sweep the bottom of the pan every minute or so and nothing will stick. Nothing else works as well, because the spiral spring, when you compress it, conforms to the shape of the bottom of your pan whereas spoons and other whisks only make contact here and there. Also it gets right into the edges of the pan where the sides meet the bottom. Ideal for whisking salad dressings and other emulsions and mixing in narrow spaces (glasses, jars, jugs etc.) such as beating an egg glaze in a cup.
