Mustard seeds are the small round seeds of various mustard plants. The seeds are usually about 1 to 2 millimetres (0.039 to 0.079 in) in diameter and may be colored from yellowish white to black. They are important herbs in many regional foods and may come from one of three different plants: black mustard (Brassica nigra), brown Indian mustard (B. juncea), or white mustard (B. hirta/Sinapis alba).

The oil is made by pressing of the seeds or by the process of grinding, whereby it is mixed with water and then further distilled. The black mustard yields a lighter colored and stronger tasting oil, while the white variety produces a yellowish colored, pungent oil. A simple mustard oil recipe is to directly press the seeds. This gives a strong tasting mustard oil. Another approach for making mustard oil is crushing the seeds, followed by separation of oil. Both the two extraction processes yield mustard oil and meal.

Culinary uses of Mustard Oil:-

  1. This oil is invariably used in Indian kitchens for preparation of different types of dishes. It is good in all types of cooking
  2. Improves flavors while frying or making salads
  3. Mustard oil is predominantly used in North India, East India, Nepal, Bangladesh and Pakistan
  4. Mustard oil is widely used which is perhaps why it is called “King of all oils”.
  5. Mustard oils are also very much useful in pickle preparation.

Health Benefits of Mustard Oil:-

  1. Mustard oil has got a typical pungent and sharp flavour that is because of the presence of a compound called Allyl Isothiocyanate. This oil has about 60% monounsaturated fatty acids (MUFA), 21% polyunsaturated fats (PUFA) and about 12% saturated fats. These fats are called as good fats.
  2. Mustard oil contains Glucosinolate, which basically works against microbes and adds on to the oil’s health benefits
  3. Mustard oil reduced the risk of Cardio vascular diseases by 70 percent, so mustard oil cuts down the risk of heart diseases if used in moderation by lowering cholesterol
  4. This oil is known as a stimulant and helps the intestine to produce digestive juices, which increase the peristaltic movement of the food, and hence the digestion process. Also the same process helps in increasing appetite by increasing production of gastric juices in our system.
