Introduction:
Lycopene from the neo-Latin lycopersicum, the tomato species, is a bright red carotene and carotenoid pigment and phytochemical found in tomatoes and other red fruits and vegetables, such as red carrots, watermelons, and papayas. Although lycopene is chemically a carotene, it has no vitamin A activity. Lycopene is part of the family of pigments called carotenoids, which are natural compounds that create the colours of fruits and vegetables.
Lycopene may be the most powerful carotenoid quencher of singlet oxygen,being 100 times more efficient in test tube studies of singlet-oxygen quenching action than vitamin E, which in turn has 125 times the quenching action of glutathione.
Tomatoes are rich in vitamins A and C and fibre , and are cholesterol free. Furthermore, new medical research suggests that the consumption of lycopene - the stuff that makes tomatoes red - may prevent cancer. Tamato are the main origin of Lycopene extract.
