Usage and Uses As a herb, fennel leaves are used in sauces for fish and in mayonnaise. It is traditionally considered one of the best herbs for fish dishes. It is used to flavour breads, cakes and confectionery. It is an ingredient of Chinese Five Spices and of some curry powders. Several liquors are flavoured with fennel, including fennouillette, akvavit, gin and was used in distilling absinthe. It should not be used in high dosages as it causes muscular spasms and hallucinations.

  • Fennel seeds are concentrated source of minerals likecopper, iron, calcium, potassium, manganese, selenium, zinc, and magnesium. Copper is required in the production of red blood cells. Iron is required for red blood cell formation. Zincis a co-factor in many enzymes that regulate growth and development, sperm generation, digestion and nucleic acid synthesis.Potassiumis an important component of cell and body fluids that helps controlling heart rate and blood pressure. Manganese is used by the body as a co-factor for the powerful anti-oxidant enzyme, superoxide dismutase.
