Neohesperidin is a bitter, white to almost white powder, easily soluble in hot water, hot ethanol, and insoluble in ether. Commercial neohesperidin is obtained by extraction from immature citrus fruit and bitter orange. It is a pro-material for Neohesperidin Dihydrochalcone, which is an intensive sweetener widely used in food and feed industry.
