Fennel ( Foeniculum vulgare ) is a flowering plant species with yellowish green / brown seed in the celery family Apiaceae.
It is indigenous to the Mediterranean and cultivated in the Central Mediterranean region of Turkey. Harvesting time is in August. Fennel seed has a warm mild aromatic taste similar to anise but more sweeter.It is sifted and traded with impurities of 0,5 %1 % and 3 % . It can be ground as powder.Its oil is used in soap industry and cosmetics.
Fennel is unique ingredient of Greek ouzo drink and liqueur. It is popular for meat dishes, fish , sea food and candies. Fennel tea is also used as a carminative. In many parts of India and Pakistan, roasted fennel seeds are consumed as mukhwas, and after-meal digestive and breath freshener.
