Soybean oil is the natural inexpensive oil extracted from whole soybeans. It is the most widely used oil all around the world, and is sold as either pure soybean oil or as a main ingredient in vegetable oil. Processed into margarine and shortenings, soybean oil's 85 percent unsaturated fat profile is among the highest of the vegetable oils. Soybean oil contains 61% polyunsaturated fat and 24% monounsaturated fat. Saturated fats in the diet can raise blood cholesterol levels and increase the risk of heart disease. So healthcare professionals recommend replacing saturated fats with unsaturated fats as much as possible.


Soybeans are native to Northeastern Asia and were first introduced into the United States in 1765. Today, the world's largest producer of soybeans is the United States with the majority of cultivation located in the midwestern and southern United States. Soybeans are the second most valuable crop in the United States behind corn and since 1970 the United States has produced, on the average, more than 1.5 billion bushels of soybeans per year. Two main products are processed from soybean: soybean oil and the dry solid residue known as meal. One-fourth of the world's supply of oil comes from soybeans. The oil is used to make many edible products such as salad and cooking oils, shortenings and margarines. The oil content of soybeans is around 20% dry basis. Soybeans are the world's largest oilseed crop, with about 13 million tons of oil produced per year. Soybeans are in high demand due to their high protein and oil content.
