I am looking to develop a fruit-based soft chew candy that is not a standard gummy. The concept is similar to pâte de fruit but with a soft, chewy texture like soft gummies. Key requirements include no added sugar, no glucose syrup, no artificial sweeteners. Sweetness should come from fruit puree, fruit juice concentrate, and possibly date paste. The texture must be soft, slightly elastic, and not too sticky. The shape is a small drop without custom molds. Currently, I need a small test batch for sample development, not mass production.
